Though it may be difficult to believe with the current weather, spring is coming! And do you know what that means? Ramp season is coming, too! Never heard of ramps? Ramps are a wild plant that grows in the Eastern United States & Canada in the spring. According to Eater, a great way to describe ramps is by what they aren’t, “Ramps are not leeks, nor are they scallions, nor are they exactly shallots. Ramps (which are sometimes called wild leeks or spring onions, adding to the confusion) look like scallions, but they’re smaller and slightly more delicate and have one or two flat, broad leaves. They taste stronger than a leek, which generally has a mild onion flavor, and are more pungently garlicky than a scallion.”
Ramps are a sign of spring and the bounty of fresh fruits and veggies that we get to enjoy all summer and fall. They are also used in the most sophisticated meals in fine dining restaurants and casual breakfast spots alike. Chefs and cooks go crazy for ramps. Whether it’s for their unique and pungent flavor or the fact that they have a short season, you will often see them popping up in your favorite restaurant!
Though you can easily enjoy ramps on a night out, they are easy and delicious to include in your home cooking routine as well. Ramps are an extremely easy way to shake up your usual dishes and go well with many different recipes. Try adding them on top of a steak or in your favorite soup! You can also use ramps as an opportunity to try a new recipe. Try ramp pesto pasta, buttermilk ramp biscuits, or a simple asparagus and ramp soup.
